How to cook Mutton Gravy?

 Mutton Gravy is a rich and aromatic Bengali dish made with tender pieces of mutton cooked in a creamy yogurt-based gravy. It's known for its delicate flavors and fragrant spices. Here's a recipe for cooking Mutton Gravy:

Ingredients:

- 500g mutton, cut into pieces

- 1 cup yogurt (preferably full-fat)

- 2 medium onions, thinly sliced

- 2 tablespoons ginger paste

- 2 tablespoons garlic paste

- 1 teaspoon white pepper powder

- 1 teaspoon green cardamom powder

- 1 teaspoon nutmeg powder - 1 teaspoon poppy seed paste

- 1 teaspoon cashew nut paste -

1/2 teaspoon mace powder - 1/2 teaspoon cinnamon powder

- 1/2 teaspoon sugar

 - Salt to taste

 - 4- 5 tablespoons ghee (clarified butter) or cooking oil

 - Fresh coriander leaves, chopped (for garnish) - Slivered almonds and raisins (for garnish)

- Saffron strands soaked in warm milk (for garnish) Instructions:

1. **Marinate the Mutton:**

- In a bowl, marinate the mutton pieces with yogurt, ginger paste, garlic paste, and a pinch of salt. Let it marinate for at least 1- 2 hours, or preferably overnight, in the refrigerator.

2. **Prepare the Spices:**

- In a small bowl, mix white pepper powder, green cardamom powder, nutmeg powder, mace powder, cinnamon powder, poppy seed paste, and cashew nut paste to form a smooth paste. Add a little water if needed.

3. **Cook the Mutton:**

- In a heavy-bottomed pan or pot, heat ghee or oil over medium heat. Add the sliced onions and sauté until they turn golden brown.

4. **Add the Spices:**

- Add the spice paste to the pan and sauté for a few minutes until the ghee/oil starts to separate from the mixture.

5. **Add the Marinated Mutton:**

- Add the marinated mutton along with the marinade to the pan. Stir well to coat the mutton with the spice mixture.

6. **Cook the Mutton:**

- Cover the pan and let the mutton cook on low to medium heat, stirring occasionally, until it becomes tender and the ghee/oil starts to separate from the gravy. This may take about 30- 40 minutes.

7. **Add Flavors:**

- Once the mutton is tender, add sugar and a bit more salt if needed. Adjust the seasoning according to your taste.

8. **Finishing Touches:**

- Gently stir in the yogurt and let the mutton simmer for another 5- 7 minutes, allowing the flavors to meld. 9.

**Garnish:**

- Garnish the Mutton Gravy with slivered almonds, raisins, saffron strands, and chopped fresh coriander leaves. 

10. **Serve:**

- Mutton Gravy is typically served with steamed rice, biryani, or Indian bread like naan or chapati. Mutton Gravy is a luxurious and flavorful dish that's perfect for special occasions or when you're looking to treat yourself to a decadent meal.
