How to cook Mustard, Elisha?

 Mustard Elisha is a traditional Bengali dish made with  Elisha fish cooked in a mustard sauce. It's known for its unique and tangy flavor. Here's a recipe for cooking Mustard Elisha:

Ingredients: - 5- 6 pieces of  Elisha fish

- 3- 4 tablespoons mustard oil

- 2 tablespoons black mustard seeds

- 1 tablespoon yellow mustard seeds 

- 2- 3 green chilies, slit lengthwise

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- Salt to taste

- 1 teaspoon sugar (optional)

- 1 tablespoon yogurt (optional)

- Fresh coriander leaves, chopped (for garnish)

Instructions:

1. **Prepare Mustard Paste:** - Grind the black and yellow mustard seeds to a fine paste, using a little water. You can adjust the proportion of black and yellow mustard seeds based on your preference for pungency.

2. **Marinate the Fish:**

- Wash and clean the Elisha fish pieces. Pat them dry with a paper towel.

- Rub turmeric powder and a pinch of salt on the fish pieces. Set them aside for about 15 minutes.

3. **Cook the Fish:**

- Heat mustard oil in a pan until it reaches the smoking point. Then, reduce the heat to medium.

- Fry the fish pieces lightly on both sides until they turn golden brown. Remove and set aside.

4. **Prepare Mustard Sauce:**

- In the same pan, add a little more mustard oil if needed. Add the ground mustard paste and cook on low heat for a couple of minutes until the raw smell disappears.

5. **Add Spices and Flavors:**

- Add turmeric powder, red chili powder, and salt to the mustard paste. Stir well to combine.

- Add slit green chilies for heat. You can also add sugar at this point if desired, which balances the bitterness of the mustard.

6. **Simmer the Sauce:**

- Add a little water to the mustard paste to achieve the desired consistency of the sauce. Bring it to a gentle simmer.

7. **Add Fish and Yogurt:**

- Once the sauce is simmering, gently place the fried fish pieces into the sauce. Be careful not to break the fish.

- If using yogurt, you can whisk it and add it to the sauce for a creamier texture. This step is optional but adds richness to the dish.

8. **Cook and Serve:**

- Cover the pan and let the fish cook in the mustard sauce for about 5- 7 minutes on low heat. This allows the flavors to meld and the fish to absorb the sauce.

- Once the fish is cooked through, remove from heat. - Garnish with chopped fresh coriander leaves.

9. **Serve:** - Mustard Elisha is traditionally served with steamed rice. The tangy and pungent mustard sauce pairs perfectly with the delicate  Elisha fish.
