How to cook chicken biryani (BD Style)?
Bangladeshi-style biryani is known for its fragrant rice and flavorful meat, often cooked with aromatic spices. Here's a general recipe for Bangladeshi Biryani with chicken. Keep in mind that variations can exist based on personal preferences and regional differences.
Ingredients: For the meat marinade:
- 500g chicken cut into pieces -
-1 cup plain yogurt
- 2 tablespoons ginger paste
- 2 tablespoons garlic paste
-1 teaspoon red chili powder
-1 teaspoon turmeric powder
-1 teaspoon cumin powder
-1 teaspoon coriander powder
- Salt to taste
For the rice:
- 2 cups long-grain Basmati rice
- 4 cups water
- Whole spices (cinnamon sticks, bay leaves, cardamom pods, cloves)
For assembling:
- Fried onions (barista)
- Saffron strands soaked in warm milk
- Ghee or cooking oil
- Chopped mint and coriander leaves
- Potatoes, peeled and halved (optional, for layering)
- Boiled eggs (optional, for garnish)
Instructions:
1. Marinate the Meat: -
In a bowl, combine the yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, and salt.
- Add the chicken pieces to the marinade.
Mix well to coat the meat evenly. Cover and refrigerate for at least 2 hours or overnight for better flavor absorption.
2. Cook the Rice:
- Rinse the rice thoroughly until the water runs clear. - In a large pot, bring 4-5 cups of water to a boil.
Add the whole spices and a pinch of salt.
- Add the rinsed rice and cook until it's about 70-80% cooked (the rice should still have a bite to it). Drain the rice and set aside.
3. Prepare the Potatoes (if using):
- Heat some oil in a pan and fry the potato halves until they are partially cooked and have a golden crust. Set aside.
4. Layering the Biryani:
- In a heavy-bottomed pot, spread a layer of marinated meat at the bottom. - Add a layer of partially cooked rice over the meat. - Sprinkle fried onions, chopped mint, and coriander leaves over the rice.
- Drizzle some saffron milk and ghee over the rice.
5. Repeat the layering process:
- Add another layer of marinated meat.
- Add a final layer of rice.
- Sprinkle more fried onions, mint, and coriander leaves.
- Drizzle saffron milk and ghee.
6. Cover and Cook:
- Cover the pot tightly with a lid or aluminum foil to trap steam.
- Place the pot on a griddle on low heat or use a heat diffuser. Cook for 30 to 40 minutes, allowing the flavors to meld and the meat to cook through.
7. Final Touches:
- Once the biryani is cooked, gently fluff the rice with a fork, careful not to break the rice grains.
- Garnish with boiled eggs and more fried onions before serving.
8. Serve:
- Serve the Bangladeshi-style biryani hot with yogurt dip, salad, or a side of your choice. Remember, this is a basic recipe, and you can adjust the spices and ingredients to suit your taste. Bangladeshi biryani tends to have a milder spice profile than other regional biryani.
