Xanthan Gum: What It Is and Common Uses

Xanthan Gum: A polysaccharide widely utilized as a food additive. It’s the product of fermentation of sugars by the bacteria Xanthomonas Campestris and is used in a multitude of ways in the food industry. Xanthan gum is produced from fermented sugar (in our case, corn sugar) that has been processed by a plant bacteria known as Xanthomonas campestris. The resulting matter is dried and then transformed into a powder. That powder is the xanthan gum we add to our Classic Gluten-Free Sourdough recipe

How is Xanthan Gum used?

Thickening and stabilizing:

Xanthan Gum is used in a wide variety of foods as a thickening and stabilizing agent. It’s useful for giving a perfect, buttery texture to recipes such as salad dressings, sauces and soups, and also can prevent ingredients from separating.

Gluten-free baking:

Xanthan Gum is often used in gluten-free baking as a substitute for gluten. It creates gluten-like elasticity, body, and chew in gluten-free baked goods, and improves the storage longevity of these items.

Ice cream and frozen desserts:

Beverages:
