The interdisciplinary research team at the University of Leeds hopes that by analyzing each step, they will be able to create a new generation of luxury chocolates with the same feel and texture but healthier ingredients.
The way the chocolate is lubricated in the mouth, whether by saliva or ingredients in the chocolate itself or a combination of the two, creates the chocolate flavor.
When a piece of chocolate touches the tongue, the fat immediately begins to play a crucial role. After that, solid cocoa particles are released, and they play a significant role in the tactile experience. As a result, the fat that is deeper within the chocolate plays a relatively minor role and can be reduced without affecting how the chocolate feels or feels.
Anwesha Sarkar, Leeds School of Food Science and Nutrition Professor of Colloids and Surfaces, stated: Mechanistic insights into how food actually feels in the mouth are provided by lubrication science. This knowledge can be used to create food with improved flavor, texture, and health benefits.
"Even if a chocolate contains 50% fat or 5% fat, it will still form droplets in your mouth, giving you the taste of chocolate. However, very little research has looked into the fact that the location of the fat in the chocolate's composition is crucial for each stage of lubrication.
"We are demonstrating that the fat layer needs to be on the outer layer of the chocolate; this matters the most," says the author. "Then, effective fat coating of the cocoa particles, which help to make chocolate feel so good," comes next.
The taste of chocolate was not the subject of the study, which was published in the academic journal ACS Applied Materials and Interface. Instead, the focus of the investigation was on how it felt and felt like.
On a fake, three-dimensional tongue-like surface created at the University of Leeds, tests were carried out with a high-end brand of dark chocolate. The study, which included in situ imaging, was carried out by the researchers using analytical methods from the engineering discipline known as tribology.
Tribology is the study of how fluids and surfaces interact, their coefficients of friction, and the function of lubrication: saliva or chocolate-derived liquids in this instance. When chocolate is eaten, all of these mechanisms take place in the mouth.
A fatty film coats the tongue and other mouth surfaces when chocolate comes into contact with the tongue. This fatty coating gives the chocolate a silky texture when it's in your mouth.
The study's principal investigator, Leeds School of Food Science and Nutrition's Dr. Siavash Soltanahmadi, stated: We think that a new kind of chocolate can be made that tastes and feels like high-fat chocolate but is healthier if we learn about the physical mechanisms that take place when people eat chocolate.
"Our research raises the possibility that producers could intelligently design dark chocolate to cut down on the amount of fat in the product."
"We believe that dark chocolate can be produced in a gradient-layered architecture with fat covering the surface of chocolates and particles to provide the desired experience of self-indulgence without adding too much fat to the chocolate's body,"
According to research conducted by the business intelligence agency MINTEL, sales of chocolate in the UK are expected to increase in revenue over the next five years. Between 2022 and 2027, it is anticipated that sales will increase by 13% to £6.6 billion.
The study's physical methods could be used to investigate other foodstuffs that undergo a phase change, such as cheese, margarine, or ice cream, the researchers believe.
