Rice dilemma!!! Yes. I have encountered this many a time in my life. Guess what!

Rice has been the staple at home since childhood. But the dilemma is that it became monotonous after regular use. The only way to break this monotony was to try different genres of rice. Red rice, brown rice, and Basmati were quite common, but one of the lesser-known varieties was special rice. It is nutritious red rice with several health benefits. Though it was not available in my hometown then, it has become one of the prominent rice varieties of the country.

 

HISTORY OF SPECIAL RICE

This is one of the rarest varieties of red rice available in the market, has a tradition that traces back to the era of the Wonders of Mysore. It is said that people who could not pay tax to the King of Mysore were asked to pay nutritious Special rice in lieu of that. This rice is unpolished and comes in a mix of red and brown color. At one point, this rice was much popular, and later it was pushed into oblivion as white rice became popular. With the awareness of organic and healthy rice increased, the traditional Special rice also gained prominence.

Special RICE BENEFITS

Nutritious rice is good for daily consumption. It has good dietary fiber as compared to polished rice. It is also rich in antioxidants and phytonutrients. The antioxidants prevent our body from infections and free radicals. Zinc present in Special rice improves the immunity and speed up the recovery and healing of the body. It also has heart benefits as well. It removes the plaque that gets deposited in the arteries. This special rice is also known for providing bone strength. It also has low glycemic index.

HOW TO COOK SPECIAL RICE?

Wash and soak rice in clean water for one hour. Add water twice the quantity of rice. Cook on high flame for 1 whistle, then lower the flame and cook for 3 more whistles. It can be easily replaced with regular white rice in dishes like dose or idly and rice flour can be used to make chapati, Kadabus and much more.

Bisi Bela bath, Fried rice, also tastes good when made using this special rice. It has better flavor than the conventional Basmati rice. It increases its quantity after cooking. Hence, make sure you add the right amount to get the desired results.

STIR FRIED SPECIAL RICE

Ingredients 

Mixed Vegetables: 250gms

Special Rice: 1 cup (soaked for an hour)

Garlic: 8-10 cloves (finely chopped)

Black pepper powder: ¼ tsp

Cornflour: 1tsp

Salt: to taste

Vinegar: 1 tbsp.

Canola oil: 4 tbsp

Method:

Pressure-cook the special rice in 2 cups of water for 2 whistles, Once done spread in a tray and let it air dry.

Finely shred the vegetables

Heat oil in a pan, add garlic, once it starts to brown add a ladle full of water and to this add cornflour and let it cook till it becomes saucy.

Add Vegetables, give a good stir and finally add the rice.

Finish with some vinegar and seasoning as per your liking.
