1. Banana Bread:

   3 ripe bananas, mashed

1 ½ cups flour

½ tsp. baking powder

½ tsp baking soda

½ tsp salt

¼ cup unsalted butter, softened

1 cup granulated sugar

2 eggs

½ tsp vanilla extract

Optional nuts (Walnuts or pecans)

Chocolate chips or dried fruits

·         Preheat oven to 350oF (1800C) Grease 9x5-inch loaf pan.

·         in a large mixing bowl, whisk together flour, baking powder baking soda and salt.

·          In a separate bowl, cream together butter and sugar until light and fluffy.

·         Beat in eggs one at a time, followed by mashed bananas and vanilla extract

·          gradually add dry ingredients to wet ingredients, mixing until just combined,

·         Stir in optional ingredients (if using).

·         Pour batter into prepared loaf pan and smooth top.

·         bake for 55-60 minute or until a toothpick inserted in the centre comes out clean.

·         Remove from oven and let cool in pan for 10 minute.

·         Transfer to wire rack to cool completely.

* Use overripe bananas for the best flavour.

*   don’t over mix the batter.

* If using nuts or chocolate chips, fold them in gently.

For a moist and tender crumb, don’t over bake.

Banana chips:

2-3 ripe bananas

½ cup oil

Salt (Optional)

Preheat oil in a deep frying pan or a deep fryer to 350 0 F (1800 C)

Slice bananas into thin rounds (about 1/6 inch thick)

·         Carefully add banana slices to hot oil in batches, being mindful of splashing.

·         Fry for 2-3 minutes or until bananas turn golden brown and crispy.

·         Remove chips from oil with a slotted spoon and drain on paper towels.

·         Sprinkle with salt (if desired0 and let cool completely.

·         Store banana chips in an airtight container for up to 24 hours.
