Recipe:
First take a pressure cooker, pour some oil and add sifted mutton, turmeric powder, salt and required amount of water.
Cook for 4 whistles until the mutton is tender.
Note : If you are cooking in a pot instead of a pressure cooker, add all the ingredients and cover and cook for about 45 minutes until the mutton is tender.
Next place a kadai in the oven and add all the mentioned spices one after the other to make masala powder and roast it for 2-3 minutes on medium flame.
Cool all the roasted spices well.
Once the spices cool down, put them in a mixing jar and grind them into fine powder.
Now to make the mutton sukkah, put a pan in the oven, pour oil and when it is hot, add the onion cut in half and fry it for 1-2 minutes on medium flame.
Then add chopped green chillies and curry leaves and saute well.
Saute on medium heat for 5-6 minutes until the onion turns golden brown.
Once the onions are slightly sauteed, add the ginger garlic paste and saute for another 2 minutes until the raw smell goes away.
Then add the already boiled mutton along with the water and mix well.
Once it comes to a boil, add the pre-ground masala powder and mix well.
Fry it on high flame for 6-7 minutes until all the water in the mutton is drained and the curry is nicely fried and colored.
Once the mutton is fried well, taste it and add salt if required.
Then add chopped coriander leaves and fry on high flame for 1-2 minutes until the oil separates and the delicious 'Mutton Chukka' is ready...
