I will not list Islamabad due to its all inclusive cuisine as a capital. You will find every single dish in Islamabad due to this city not being part of any Province. Rawalpindi is also similar to Islamabad as both are home to special fast food places burgers, Pizzas, rolls, cheese Prathas a blend of west and eat is found there. Pakistani versions of fast food and on the go meals.
I will list a number of famous dishes from different cities as we just have too many dishes from one place.
Lahore, Punjab
Paye, Roghni Naan and Cholay with Lassi
You can get this from many places but trade mark is Phajja Paye shop at Chowk Heera Mandi
Chicken or Lamb Karahi but chicken is better.
Again food street and many other places serve it Butt Karahi at Lakshamy Chowk
Tak-a-Tak dish
which can be made out of goat’s liver, brain or testicles (poor goat)
Mutton Nihari with Naan
Karachi, Sindh
Kat-a-Kat (Sindhi version) Different organs of lamb
Afghan Boti (Its not native but cosmopolitan city)
Kolachi, Chicken Peshawari Karahi
Fun fact: Most number of Pashtoons living in any city are in this order Karachi (7 million) Peshawar and then Kabul :)

Karachi & Hyderabadi cuisine is very famous Qorma, Nargasi Koftay etc but with arrival of UP, Bihari, Pashtoons, Bengalis and Afghans its more diverse than anywhere in Asia.

Multan is famous for sweet things, Rabri Falooda, Jamun and Ghulab Jamun etc
Chicken Tawa
Gujranwala, Punjab
A city famous for its appetite of Wrestlers. In Gujranwala you are advised never stop eating just go all the way.
Masala Batair (Quails)
Rest of the dishes are very similar to Lahore but much bigger portions of food.
