Milky Cluster Beans or Guar ki Phali

Ingredients: 

  1.    250 grams cluster beans
  2.    250 ml oil for frying.
  3.    2 medium sized onions(pyaz)
  4.    10-12 green chilli paste(hari mirchi)
  5.    1 teaspoon cumin seeds(zeera)
  6.    1 tablespoon peanuts(moongfali)
  7.    1 teaspoon ginger garlic paste(adrak laisan)
  8.    10-15 curry leaves(kadi patta)
  9.    Salt as per requirement
  10.    1/2 teaspoon turmeric powder(haldi)
  11.    300 ml milk
  12.    1/2 cup coriander leaves(dhaniya patta)

Recipe:

  1.    Chop cluster beans to 5-6 pieces each
  2.    Take a pan and deep fry cluster beans in the oil till it shrinks(sikudna) lightly.
  3.    Take the fried beans and the oil both in different containers.
  4.    Put 1 and 1/2 tablespoon oil in the pan.
  5.    After the oil turns hot put cumin seeds.
  6.    Keep the flame low and put diced onions in the oil.
  7.    When onions turn light brown put ginger garlic paste.
  8.    Toss them lightly and add salt according to taste.
  9.    Add curry leaves and then add green chilli paste.
  10.    Toss them for 1 minute.
  11.    Put roughly grinded peanuts and toss lightly.
  12.    Put turmeric powder.
  13.    Put fried beans and mix it well.
  14.    Add milk and again mix.
  15.    Put coriander leaves and cover the pan for 7 minutes.
  16.    Switch off the stove or induction.
  17.    Serve with flatbread(parathas) or deep fried bread(poori).

Note:

     The beans preparation is done on a low flame after the oil turns hot.
