How to prepare Basic Curry/Gravy for all type of Pakistani or Indian Cooking?
Pakistani and Indian cooking is famous for its spices and a unique aroma of that cooked foods. There is a lot of special recipes and unique dishes like Biryani, Nihari, Karahi, Haleem and so forth. But the simple curry or gravy for all kind of food cooked in every domestic of Pakistan and India is nearly same. Whether you cook lentils, greens, any sort of meat or blend meals. The general technique used for cooking simple curry or gravy is as the following:
Components (ordinary cooking of four to six servings):
1. Cooking Oil or Ghee (Indians use butter additionally)
2. Onion: one medium sized
3. Garlic: one small bulb of a garlic. Peel it and make paste of it. Chopped garlic also can be used.
4. Ginger: one inch piece and make its paste. You may use chopped ginger as well.
5. Curry Masala: (mix spices chili powder, turmeric powder, coriander powder)
6. Asafetida: (a pinch) almost used by Indians broadly speaking in vegetables however Pakistanis do not use it normally.
7. Tomatoes: 2 medium sized (for everyday curry). Cut in small portions.
8. Black pepper: (non-compulsory) 1/2 tea spoon. Some people like to use black pepper in their curries but its optional.
9. Salt to flavor
10. Green coriander: (one small bunch) half chopped and half in the form of leaves.
11. Green Chilies: 2 to 4 cut it in small pieces or in the shape of Julian reduce.
Method of Cooking:
1. Heat (medium high) oil in a cooking pot.
2. Add onions sliced thinly. While it is becoming light brown. Turn heat to medium
3. Add garlic and ginger paste. Blend it with spoon and cook it for 2 minutes on medium Heat.
4. Add Curry Masala and asafetida (optional). Cook for two mins
5. Add tomatoes. Cook it till tomatoes are tendered well. Now blend it well to a paste. And cook it until oil comes up. (it'll take 4 to 5 mins or a bit more time if tomatoes are hard)
6. Add black pepper (it is Optional. Skip this step if you don’t want to add it to the gravy). Mix and cook for two mins.
7. Then add chopped coriander to gravy and cook it for 2 mins.
8. Now add any food you want to prepare in this gravy (It can be Vegetable, Chicken, Any sort of Meat, Minced meet, Lentils etc.). Now cook it accordingly consuming the appropriate time required for that specific food. Cooking time can different kind of foods is different, veggies cook in less time than meat and lentils, Chicken cooks faster than meat, beef take longer time, mince will take time but less than beef. And Lentils can even take little longer time compared to veggies. After adding the food, you want to Cook, prepare it on medium heat high for 10 mins. For the foods which takes longer time cook them until tendered and cooked properly on medium heat (the food which takes longer time should not be cooked on high heat otherwise it will be cooked from outside and not from inside. So, keep in mind that it's essential to cook it on medium heat for longer time). While cooking cover it by a lid for faster cooking and also for good taste.
9. Now if the food is cooked well. Sprinkle Coriander leaves and green chilies thinly cut, dash black pepper (optional) and roasted powdered coriander (optional) and cover it for two to 5 minutes while cooking. You may add chopped mint to the food.
