How to make tasty chicken biryani recipe

Ingredients

For Marinating Chicken:

  • 1 kg chicken (bone-in preferred)
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Juice of 1 lemon
  • A handful of chopped mint and coriander leaves


For Rice:

  • 2 cups long-grain basmati rice
  • 6 cups water
  • 1 bay leaf
  • 4 cloves
  • 2 green cardamoms
  • 1 cinnamon stick
  • Salt to taste


For biryani spice and layering:

  • 3 large onions, thin sliced
  • 2 tomatoes, chopped
  • 3 tablespoons of oil or ghee
  • 2 tablespoons biryani spices (store-karideli or homemade)
  • A pinch of saffron 1/4 cup soaking in warm milk
  • Extra mint and coriander leaves for layering
  • Onion


Preparation measures

1. Marinate the chicken

Start by mixing yogurt, ginger-ligger paste, turmeric, cayenne powder, garam spices, lemon juice and salt in a large bowl. Add chicken pieces and coat well. Spread the chopped mint and coriander. Let it marinate at least 2 hours or preferably overnight in the refrigerator. This ensures that the chicken absorbs the flavors in a dil.

2. To cook rice

Wash the basmati rice for 30 minutes and soak. Bring water to a boil with whole spices and salt. Add rice to soak and cook until 70% is complete - grown should still be firm. Drain and put aside.

3. Fry the onion

In a heavy bottomed pot, fry hot oil or ghee and sliced onion until golden brown. Remove half onion for decoration later.

4. Cooking chicken

In the same pot, add the tomatoes to the rest of the onion and cook until soft. Add biryani spices and marinated chicken. Cook on medium heat until the chicken is almost cooked (about 70%). It will finish cooking during the final layering process.

5. The level of biryani

Reduces the temperature to the lower. Spread half the rice of the parabilo over the chicken. Sprinkle half of saffron milk, mint, coriander and fried onion. Repeat with the remaining rice and toppings. You can add a few drops of rose water or kewra essence to the aroma (optional).

6. Dum cooking (boiling)

Seal the pot with a tight id or dough to trap the steam. Cook on very little heat for 20-25 minutes. This "dum" technology allows the flavors to beautifully meld.

Serving instructions

Let the biryani rest for 10 minutes before opening the ID. Flow the rice gently to mix the layers. Serve hot with rita (spice yogurt), salad or boiled eggs for the royal festival.

  • Rice matters: Use old basmati rice for the best texture and aroma.
  • Marine Time: The longer, the better. It tenders the chicken and influences the taste.
  • Do not overcook the rice: Cut it slightly to avoid the mushroom after cooking the dum.
  • Use heavy pot: Prevents a thick-botmed pot during a slow cooking.
