              Chicken Biryani

Ingredients for chicken biryani

1) Three large red onions, thinly sliced
2) 200ml of coconut oil
3) 1 kilogram of skin-off chicken thighs
4) Four tablespoons of yogurt
5) One teaspoon of chili powder
6) 1/2 tsp of turmeric powder
7) One teaspoon of garam masala
8) three teaspoons of ginger paste
9) One teaspoon of garlic paste
10) One lemon's juice
11) two green chilies
12) two sticks of cinnamon
13) Twelve pods of cardamom
14) Two teaspoons of cumin seeds
15) Six cloves
16) Add salt to taste.
17) One bunch of mint leaves
18) One bunch of coriander leaves
19) One kilogram of basmati rice that has been matured

Instructions

1) To begin, heat the oil in a saucepan over medium-high heat. Fry the sliced onions in batches until they are golden brown. This will create the crispy onions.

2) Afterwards, marinate your chicken in a large pot with the chicken, one cinnamon stick, eight cardamom pods, one thinly sliced green chilli, one tsp cumin seeds, four cloves, chopped mint and coriander, yoghurt, turmeric, garam masala, ginger, garlic, and lemon juice. Thoroughly combine and let it marinade for four to twenty-four hours.

3) After giving the rice two thorough rinses, let it soak in water for forty minutes.

4) Add 1 tablespoon salt, 1 green chili, cut in half lengthwise, 6 green cardamom pods, 1 cinnamon stick, 2 cloves, and 1 tsp cumin seeds to a big saucepan of water and bring to a simmer.

5) Place the rice in the soaking water, give it a quick stir, and cook for 6 to 8 minutes, or until it's cooked through. The rice should still have some bite to it.

6) Take the rice out of the water and reserve.

7) Turn up the heat to high and cook the marinated chicken for 6–7 minutes, stirring every 1–2 minutes.

8) Take out half of the chicken, and then cover the chicken in the saucepan with half of the rice.

9) After that, sprinkle some coriander, mint, and crispy onions on top.

10) Arrange the remaining chicken and repeat with the herbs, rice, and crispy onions.

11) Cover the biryani by placing a fresh tea towel over the pot's lid.

12) Set your element to extremely low for half an hour after ten minutes on medium high. Remove from the fire and set aside to rest for twenty minutes before covering and serving.
Have fun!
