Koozh Ragi
This breakfast food is ideal for cooling and strengthening the body when the intense summer heat wreaks havoc on Chennai and all of Tamil Nadu.
Porridge, or ragi koozh, is a staple in South Indian villages. It efficiently satisfies hunger and increases energy, providing farmers with the much-needed strength to go about their daily business beneath the sun.
Components:
One cup of ragi powder
Prepared rice: ¼ cup
Buttermilk: Ragi recipe as needed
Technique:
1/4 cup of cooked rice should be added to 1 cup of ragi powder.
Fill with water.
Let it marinate outside for the entire night.
Boil twice as much water in a pan or kalchatti the following day.
Pour in the ragi mixture and whisk when the water begins to boil.
Let it cook.
The mixture's color changes and the raw scent goes away after a while.
Remove it from the flame at this moment.
To suit personal flavor, take the necessary amount of cooked ragi and combine it with the necessary amount of buttermilk.
This goes well with pickles, tiny onions, and green chilies.
You can keep the leftovers in the fridge for up to four days.
