How to make dal paratha (Lentils stuffed Indian bread)?
Dough (INGREDIENTS):-
1 cup whole wheat flour
1/2 cup water
1/2 tsp ajwain
2 tsp oil
Salt to taste
Dal mixture (ingredients):-
2 cups boiled chana dal
I/2 tsp red chili powder
1/2 tsp cumin powder
1/2 tsp turmeric powder
Green chilies finely chopped
Salt to taste
coriander leaves
2 Onions
Procedure to make
Dough:-
Put 2 cups of whole wheat flour in a bowl, add salt, carom seeds, turmeri,c, and out. Mix them slowly.
Knead the dough by adding water slowly, and then keep the dough aside for 30 minutes.
Points to be noted:-
1. Always use half amount of water than the flour.
2. Don't add all the water in the flour in one go.
3. Add water to the flour gradually.
4. Knead the dough till it becomes soft.
5. After kneading, grease the surface of the dough with oil and cover it with a wet cloth.
6. Put the dough aside for at least 20-30 minutes.
7. After 30 minutes, again knead the dough a bit and use it for making parathas.
Dal Mixture:-
Soak the dal for 5-6 hours and then cook it till one whistle comes.
After the lentils cool down completely, heat oil in a pan, then add 1 tsp cumin, finely chopped green chilies and onions.
Cook the onions till they become transparent. Add salt, red chili powder, turmeric and onions, and the boiled lentils. Mix everything and mash it with a masher, then add green coriander and mix.
Points to be noted:-
1. Don't overcook the dal.
2. Dal should be dry, not wet.
3. All ingredients should be finely chopped so that it doesn't come out while rolling.
Dal paratha:-
Keep the tawa on one side for heating and break a ball from the dough and roll it in the shape of a round roti.
Now put one spoonful of the lentils mixture on the round roti and from one hand lift the sides of roti slowly slowly and from the other hand try to cover the mix make a ball-like structure and wrap it the ball in dry flour and roll it out with light hands.
Points to be noted:-
1. If you fill too much dal mixture inside the roti, it will come out while rolling, and if you fill less quantity of dal mixture inside the roti, it will not taste perfect.
2. Filling inside the roti should be average, not too much, and not too little.
Place the roti or paratha on a hot Tava and cook it lightly from one side and turn it after that. Put some oil over it cook the other side till it is completely golden brown.
If your paratha is rising, it indicates that it will be soft from inside, but if it's not growing, then also it's good in taste but a little tight.
If you use mustard oil or olive oil for making paratha, it will taste even better. (My personal opinion)
Prepare all the parathas like this.
Place all the parathas in the casserole so that it will not cool down soon.
Dal Paratha is ready to be served, serve it with green chutney and curd or you can also eat this with some spicy vegetable curry. This paratha goes well with everything.
