HOW TO MAKE CHICKEN BIRYANI RECIPE (THE BEST!)

And, look! An authentic Chicken Biryani recipe with simple, easy-to-follow instructions (no curveballs!) And oral irrigation, a traditional Pakistani and Indian flavor. This recipe includes tips on how to get the dominant rice, tender chicken, and a different taste of biryani—tested to perfection!

What is biryani?

Biryani is a complex rice dish made with layers of roasted meat and rice. Given its decorative use and luxurious finishes, it is not surprising that biryani has roots in Persian cuisine.
There are two main ways to make biryani:

Kachi (raw) is a biryani, made from raw meat and boiled rice and cooked together, and
Pakki (cooked) biryani, in which cooked meat and boiled rice are sprinkled together.

In Pakistan, pakki (or cooked) biryani is very common, with many famous varieties such as Cindy, Karachi style, and Bombay biryani. This recipe combines these styles and is similar to what you can find at a typical Pakistani or Indian restaurant or dinner party.

 

NOTES ON BIRYANI CHICKEN INGREDIENTS

I have deliberately chosen the ingredients and quantities to give this biryani a solid foundation. That said, this recipe can make some changes and adaptability and continue to be very good.

  • Oil / Ghee: I used liquid oil and Ghee to taste.
  • Onions: You can cut them (traditionally) or finely chop them. If you are using a food processor to do this, call to cut it to not stick to the paste.

 

  • Bone-in, cut-up, skinless chicken: I buy whole chicken pieces, but chicken thighs work with them. You can also use lean chicken, or it may require a shorter cooking time.
  • Perfect spices: A kind amount of whole spices is a distinctive feature of biryani. Excellent herbs are discarded while eating, but if you don't want to bite into them, feel free to put them in a spice / semi-slim bag.
  • Garlic + Ginger: I have provided the bulk of it in whole form and spoons. I use mud and a pestle or food processor to crush them.

 

  • Tomatoes: Since biryani has many sour ingredients such as yogurt, dried plums (Alu Bukhara), and lemon, keeping a small tomato gives it just the right amount of tang.
  • Yogurt: Not only does yogurt marinade make the chicken tender and delicious, but it also makes cooking biryani much smoother. For a non-dairy option, try using coconut milk.
  • Rice: I recommend using old rice, whole grain cereals that you can find at other grocery stores, any particular Indian / Pakistani store, or online.

 

  • Dried Plums (Alu Bukhara):I always enjoy the help of biryani with these beautiful wonders. Alu Bukhara is often used in biryani to give a delicious, tangy taste. They are commonly found in South Asian grocery stores, but you can substitute dried seeds or leave them if you can't find them.

 

HOW TO MAKE CHICKEN BIRYANI – 3 MAIN STEPS

I believe this recipe is as simple as it could be an actual biryani recipe - no unnecessary or tedious steps that don't contribute to great taste. You will find that while it takes time, most of it is cooking time. And the end result is rewarding and impressive. Here are three components of chicken biryani:


1st step: prepare the chicken.


Prepare biryani masala (or use store-bought ones) and serve chicken.

Cook the chicken curry. While cooking on low heat, prepare the rice.

 

2nd step: parboil the rice.


Bring a pot of water to a boil and boil the rice. Wash and set aside.

 

3rd step: Bring it all together for a final steam ('dum ').

Put half of the rice, all the chicken, and then the remaining rice on top. Enter finishing touch.

Allow the smoke to rise, then reduce the heat and allow the flavors to settle

BIRYANI MASALA

Pakistani biryani is hardy in spice (and flavor!) And is often made with biryani masala, or put, a spice blend that gives it a different, masaledar (or spicy) flavor. I recommend using the biryani masala recipe below (you need a good spice grinder and a few extra spices). If you do not choose, you can substitute your favorite biryani masala. This recipe has been tested and works well with Bombay Biryani Masala. To make the Biryani masala for this recipe, add the following ingredients to the grice spice and process until smooth. It makes ~ 2 tbsp, which is exactly what you will need in this recipe.

 

  • One medium dried bay leaf (tez patta)
  • Two dry red hot peppers (such Lal Mirch)
  • One complete mace (after)
  • 2-inch cinnamon stick (daarchini)
  • 4-5 whole cloves (small)
  • One black card (bad Daichi)
  • 1 star (Saadiyat)
  • 3-4 green pods of cardamom (elaichi)
  • 1 tsp grilled cumin seeds or black cumin seeds (shah jeera)
  • 1/2 tsp black peppercorns (Kali Mirch)
  • 1/4 tsp fennel (saunf)
  • 1/4 tsp carom seeds (ajwain)
