how to Cook Chicken Biryani

Obtain the following ingredients before you start this culinary journey:

500g of chicken, preferably thighs and drumsticks

Long-grain basmati rice, two cups

4 tomatoes, finely chopped, and 2 large, thinly sliced onions

Greek dairy works nicely as one cup of plain dairy.

A quarter cup of chopped fresh mint leaves

1/4 cup chopped fresh cilantro (coriander) leaves

(Store-bought or home-made) 1/2 cup fried onions

1/4 cup of  vegetable oil or cow ghee (clarified butter)

2 tablespoons of biryani masala, either homemade or purchased

Ginger-garlic paste, 1 tablespoon

1 teaspoon of red chili powder, tasted, etc.

One-half teaspoon of turmeric powder

2 tablespoons of warm milk and 1/4 teaspoon saffron strands

50 ml of hot milk

Fresh spices: 4 green cardamom pods, 4 cloves, 1 inch cinnamon stick, 1 bay leaf, and 1 black cardamom pod

Salt as desired

Step 1_Marinate the chicken

Combine the chicken pieces with the curd, half of the chopped mint and cilantro, half of the ginger-garlic paste, half of the biryani masala, red chili powder, turmeric powder, and salt in a large mixing bowl. Mix thoroughly, making sure the chicken is coated completely. Refrigerate the bowl for at least an hour to allow the flavors to mingle. Cover the bowl with cling film.

Prepare the rice in Step 2

Basmati rice should be thoroughly cleaned in cold water until the water is clear. For around 30 minutes, soak the rice in water. Bring enough water to a boil in a large pot, then add the entire spices and a healthy pinch of salt. When the water is boiling, add the drained rice. Rice should be cooked until it is 70 to 80% done (but still somewhat firm). Rice should be colander-drained and placed aside.

Sauté the onions in Step 3

Heat the vegetable oil or ghee over medium heat in a pan with a heavy bottom or a biryani pot. Add the onions, which have been finely sliced, and cook them until they are golden brown and have caramelized. To use as garnish, take half of the fried onions out of the recipe.

Layering the Biryani in step 4

Add the marinated chicken in a single layer to the same skillet as the remaining cooked onions. Add the remaining biryani masala, a few tablespoons of water, and the chopped tomatoes after that. Once the chicken is thoroughly cooked and tender, remove the cover from the pan and continue cooking the chicken on medium heat until the oil begins to separate from the masala.

Assembly and sealed Cook in Step 5

Turn on the oven to 350 °F (175 °C). Layer half of the rice that hasn't fully cooked in an equal layer over the pan of cooked chicken. On top of the rice, scatter half of the fried onions, chopped mint, and chopped cilantro. With the remaining rice and toppings, repeat the layering procedure.

To guarantee that no steam escapes from the pan, cover it with a tight-fitting lid or foil it up. The biryani pot should be placed in the preheated oven and cooked for 30 to 40 minutes at a low temperature. This method, referred to as "Sealed cooking," enables the flavors to merge for the rice to soak up all the enticing scents.

Step 6: Enjoy and Serve

When the biryani is fully cooked, take it out of the oven and give it some time to rest. With a fork, gently fluff the rice, taking care not to break the grains. For a filling and fulfilling supper, pair this flavorful Chicken Biryani with pasta (a yogurt-based sauce) or a side salad.
