The domestic goat (Capra hircus or Capra aegagrus hircus[a]) is a domesticated mammal. It comes from the wild goat.[b] A male goat is called a buck and a castrated goat is called a wether, a female is called a doe. Young goats are called kids.

People eat their meat, drink their milk, and use their fur and skin. With goat milk, cheese can be made, along with other dairy products like yogurt. Some farmers use goats to eat plants the farmers do not want, such as weeds. Other times, the goats are used to keep grasses and other plants from getting too tall. This also benefits the goat because they get plenty of food to eat.

 

The goat has cloven hooves, a long beard on its chin, a short tail that turns up, and horns that grow up from the head in an arc. The hair is straight with a woolly coat under it during winter. Goats have rectangular irises. They are one of the few species to have these unique eyes.[1]

 

The goat is about 70-120 cm (28-48 inches). They weigh from 45-54 kg (100-120 lb.) during adulthood.

 

The diet of the goat includes eating grass, leaves, shrubs, root vegetables, and other kinds of plants.[2] Some ranchers use goats to clear brush and unwanted plants from their pastures. Goats living in the desert, where plants are quite hard to find, have been seen climbing trees to get food.

Goats are smart and active. They enjoy playing with other goats and climbing. They are social animals that may live in groups or herds.

Use wet cooking methods as opposed to dry. Braising and stewing are good cooking methods for less tender cuts of meat like goat. Flatten the meat with a tenderizing mallet or score it across the fibers with a sharp knife. This will break up the muscle fibers making them softer resulting in a more tender piece of meat.

Goats are mainly grown to produce milk, meat, or fiber. Usually, the primary production is meat and milk, and there is little global information on fiber production.

 

The potential of goats for the sustainable supply of milk and meat for human consumption is unquestionable, and their contribution to improve the nutrition of rural populations is likely to increase. At the same time, consumption of goat cheese should also increase in developed countries. This is attributed to the image of goat cheese as a product obtained under natural conditions when compared to cow’s milk and its products, obtained from more industrialized farms.

 

Government programs to support goat rearing should focus on research and training on genetic improvement, farm management, infectious disease control, product collection and marketing markets [3].

 

4.1. Milk production

Unfortunately and unfairly, the dairy goat is still considered in some regions as the cow of the poor. In proportional terms to its size and feed intake, the milk yield of the goat is often remarkable. The goat has a reduced food intake, its feeding is cheap, it is a small animal and easy to keep, and each goat produces enough milk to feed an average family. Comparatively, and due to its size, the cow has very high maintenance costs and is more difficult to maintain at home.

 

Dairy goats produce about 15.2 million tonnes of milk, representing about 2% of the world’s total milk produced by livestock species [13]. Developing countries, particularly in Asia and Africa, account for about 83% of the total value produced. In Europe, dairy goat farming is the main reason for goat production, where only 3% of the world goat population produces about 15% of the global goat milk, mostly for cheese production [14]. Spain, France, and Greece are the main European producers of goat’s milk. In France, the development of research and development in the dairy goat sector has been intensified with programs organized for the selection, processing, and commercialization of goat’s milk, mainly produced from the Saanen and Alpine breeds. In France, it is where the highest production figures per animal are achieved, whereas Iran has the lowest values.
