FAVORITE CHICKEN BIRYANI
A rice and chicken dish called chicken biryani is made by steaming layers of chicken, rice, and aromatics. I've streamlined the cooking process for my Chicken Biryani dish by marinating the chicken in a hot concoction of garam masala, garlic, ginger, chilli peppers, coriander leaves, and garlic. The seasonings and aromatics on the chicken's outside caramelise while frying to create an extremely tasty crust. To properly caramelise the fried onions into a sweet, umami-rich layer that contrasts with the spicily delicious chicken, I prefer to prepare them separately. A fast par-boil of the rice with whole spices like cardamom, bay leaves, and cumin adds flavour and guarantees that the rice will be tender enough to steam when the Biryani is put together.

WHY THIS RECIPE WORKS
This Chicken Biryani can be steam-cooked rather than boiled by first par-boiling the rice. The chicken becomes moist and tender as a result.
The chicken is thoroughly seasoned and develops new flavours by Maillard browning when it is first marinated and then browned.
Fried onions that have been caramelised properly give a tonne of umami and a light sweetness that provide the ideal counterpoint to the savoury and spicy chicken.
CHICKEN BIRYANI INGREDIENTS Chicken - I suggest using a bone-in, skin-on piece of chicken, such as thighs or drumsticks, for the maximum flavour. The lengthier cooking time of this meal means that breast meat will work in a pinch, but it won't be as tasty and it will become dry.
Aromatics: The chicken is marinated in a mixture of herbs, spices, and ginger garlic paste. All of these spices are released into the rice while the chicken steams.
Herbs - I like to include fresh herbs in my marinade for the chicken, such as cilantro (also known as coriander leaves) and fresh mint leaves. Make sure to cut up a few extras because they also make a nice garnish to add to the Chicken Biryani.
Spices: For the chicken marinade, I use ground spices like garam masala and ground cinnamon. Biryani masala also works great, if you can find it. I use entire spices like green cardamom, cumin, and bay leaves in the rice. Sometimes I like to add some star anise or cloves here. Saffron gives the rice its golden hue, but turmeric works just as well if you can't locate any.
Fried onions make up the third element of biryani, along with chicken and rice, and I enjoy eating a lot of them.
Ghee - Ghee is clarified butter that has had the water and milk proteins removed. It is also known as "clarified butter" for this reason. You get the butter flavour without having to be concerned about the milk solids burning.
Red chilli powder can be used instead of fresh green chilies, which I generally use in my marinade for the chicken to give the dish some heat.
Long-grain rice should always be used to make biryani. I advise use basmati.
