When people hear the word beignets, they usually picture those fluffy, cloud-like pillows drowning in icing sugar at Café Du Monde in New Orleans. Me? I imagine myself eating approximately six meals while pretending to stop at two. Now, New Orleans has been through a lot, and if you ever get the chance to visit the Crescent City, go taste the real deal. Until then, I decided to bring a little “Big Easy” magic into my own kitchen — slippers on, music playing, and zero culinary shame.
My slightly rebellious take on a New Orleans classic is presented here. I promise, once I make these, my family and friends start talking like they’re locals, shouting, “Laissez les bons temps rouler!” (which I pretend I totally understand).
Ingredients (aka the stuff I line up on my counter like I know what I’m doing):
4 cups LouAna peanut oil – because I want that nutty flavour without the guilt
3 cups flour – yes, I measured… eventually
2 cups milk – straight from the fridge, no warming ceremony
1 tablespoon baking powder – the magic puff-maker
1 tablespoon seasoned salt – flavour insurance
1 tablespoon garlic – because I have trust issues without garlic
1 teaspoon thyme – for sophistication
1 teaspoon Louisiana hot sauce – just enough to make people nervous
The star of the show is 1 pound lump crabmeat. 2 cups fresh corn, cooked – sweet, juicy, and minding its own business
1/4 cup parsley, minced – for colour so it looks “fancy”
1/4 cup green onions, sliced – because everything is better with them
Directions (where things get serious… briefly):
First things first, I heat up the peanut oil in a frying pot until it hits 350°F. I stand there watching it like it’s a suspense movie, thermometer in hand, pretending I’m a professional chef instead of someone who just Googled this five minutes ago.
