Millets, a group of small-seeded grasses, were once a staple food for large populations across the world, particularly in Asia and Africa. Often termed "Nutri-Cereals," these grains are experiencing a much-deserved global resurgence due to their superior nutritional profile, health benefits, and environmental resilience compared to popular cereals like rice and wheat. They are naturally gluten-free, non-acid-forming, and are excellent sources of dietary fiber, protein, vitamins, and minerals.
The Importance and Health Benefits of Millets
Millets are nutritionally superior to fine cereals and offer a wealth of health advantages that address many modern lifestyle diseases.
Blood Sugar Control:
Millets have a low Glycemic Index (GI) due to their high fiber and non-starchy polysaccharide content. This is crucial as it prevents sharp blood sugar spikes, making them an ideal choice for managing and preventing type 2 diabetes.
Heart Health:
Their rich content of antioxidants (like polyphenols) and soluble fiber actively helps in lowering LDL ("bad") cholesterol and total triglyceride levels, thereby promoting robust cardiovascular health.
Digestive Wellness:

Pearl Millet (Bajra):
Known for being high in Protein (12-16%) and Iron, Pearl Millet aids significantly in weight loss efforts, promotes heart health, and is traditionally recommended for fighting insomnia.
Foxtail Millet (Kakum):
Rich in both Iron and Protein (often double that of rice), Foxtail Millet is particularly beneficial for Thyroid health and effectively assists in managing type 2 diabetes.

The Importance of Soaking
Millets are incredibly versatile and can easily replace rice or wheat. However, they contain naturally occurring compounds called phytates (phytic acid), which can inhibit the absorption of minerals like iron and zinc. Soaking is the traditional and best practice to counteract this.
Millet Preparation Steps:
Rinse Thoroughly:
Always wash the millets 2-3 times under running water to remove any dust or external particles.
The Soaking Rule:
For most millet varieties (Foxtail, Little, Kodo, Barnyard), soaking them in clean water for 6 to 8 hours before cooking is highly recommended. For quicker options like Pearl Millet (Bajra) or Sorghum (Jowar), 4 hours can be sufficient.
Why Soak?
Soaking initiates the germination process, which helps to break down the phytates, making the minerals much more bioavailable (easily absorbed by the body). It also reduces the cooking time significantly and improves the grain's texture, making it fluffier and easier to digest.
Cooking Ratio:
After soaking, discard the soaking water. Use a standard ratio of 1 part millet to 2 parts fresh water to cook them, similar to rice. Bring to a boil, then simmer covered for 15-20 minutes until the water is absorbed.
Usage:
They can be cooked as a whole grain for Pulaos, Khichdi, and Upma, or ground into flour (Atta) for making Roti (Bhakri), Dosa, and Idli batters.

For centuries, millets were the primary staple, especially in the arid and semi-arid regions of Asia and Africa. Ancestors utilized them to make everyday foods like nutritious porridge (e.g., Ragi Koozh or Kali), wholesome flatbreads, and traditional fermented beverages.
Climate Resilience:
Ancient farmers valued millets highly for their resilience; they are naturally drought-tolerant, require minimal irrigation, and are resistant to pests, ensuring essential food security even in challenging climatic conditions.
Cultural Significance:
Different millets were intrinsically associated with specific health benefits in traditional medicine (e.g., Finger Millet for bone strength) and were actively used in religious rituals and cultural festivals, cementing their status beyond mere sustenance.

How Rice and Wheat Were Wrongly Marketed
The shift away from millets to the dominance of rice and wheat in many diets is a relatively modern phenomenon, largely driven by deliberate policy and aggressive marketing that occurred primarily after the mid-20th century.
The Green Revolution Policy:
The introduction of high-yielding varieties of rice and wheat in the 1960s was focused on maximizing calorie production. These crops were heavily promoted, backed by extensive government subsidies, research, and guaranteed procurement prices, while millets were marginalized.
Public Distribution Systems (PDS):
Governments actively pushed rice and wheat through the PDS, making them easily accessible and economically viable for the general population. This exclusionary focus effectively branded millets as "poor man's food" or "coarse grains," leading to their consumption decline.
Industrial Refinement and Marketing:
The rise of industrial roller milling favoured hard wheat for producing refined, white flour (maida). This refined product, stripped of its bran (fiber) and key nutrients, became associated with modernity and higher social prestige, replacing the consumption of wholesome whole millets.
The Misconception of Status:
As rice and wheat became readily available and government-backed, their consumption became erroneously tied to a higher social and economic status, resulting in a massive and detrimental shift away from the traditionally superior millets.
